I was commissioned by a friend to make macarons for her baby’s shower party. I know I need to put the macarons together a day before the event to give its flavor time to blend. To buy me some time, I’ve also decided to make the shells days ahead of that too. Would it still be fresh and taste as good in time for the party?

Situations like this require that you know how to store macarons. If you don’t, you’ll either have soggy or broken pieces to everybody’s disappointment.

The key to getting the most out of your macarons is to eat them fresh. At this point, this food that’s so well loved by many is crispy on the outside but soft and delicious in the inside. But what if you’ve baked a little too much of it? How can you store macarons while keeping it crisp, soft and delicious even for days?

There are a variety of ways to store and keep macarons fresh. In this article, I will lay down the procedures that I’ve followed every time I cooked a little too much of this well-loved goodies, read on to discover a few tricks.

Effective Ways to Store Macarons​

There are a lot of ways you can effectively store macarons and preserve its delightful goodness like it’s fresh from the oven. In this section, I will share with you a few of them. These are true and tested ways to store this favorite delight and maintain its freshness even for some time.​

1. Storing macarons right after you bake it​

I assume you already know how to bake your own macarons or you just bought it from a favorite shop. Let me just focus on storing them.

  • Allow the macarons to cool down after baking. This step is important if you want your macarons not to crack and stay crispy. Often times, we immediately fill them forgetting that these goodies are fragile, causing them to break.
  • When the shells have cooled down, fill them as desired. Some of the favorites are fondue, cream cheese and fruit jams. The filling must be done before you store your macarons.
  • Store the macarons in an airtight container and make sure to tighten the lid. If you fail in this one and air did get in, your macarons will end up soggy.
  • If you think you can consume the macarons within the day, you can keep it in the pantry. If you’ve made a little too much, make sure to store what you can’t eat today inside the fridge.

2. ​Storing macarons in the fridge

  • For the part that you can’t consume, place it in an airtight plastic or glass container. Always avoid putting this delicious food in a plastic bag. Doing this is the best way to break those sensitive and crispy shells. A little contact with anything heavy, and there you go, broken shells.
  • Bear in mind that refrigeration should only be for three days. Beyond that, don’t expect the quality of the macarons to stay the same. On the other hand, if you plan to keep it for longer than three days, you better put in inside the freezer. Some have successfully kept macarons fresh in the freezer for six months.
  • Make sure to position your macarons where no heavy objects can bump into it. Place it where the temperature is consistent and this makes near the door a big no no.

3. Miscellaneous ways to store macarons

Other ways you can store macarons if you don’t have a plastic or glass containers are:​

  • Box—This should be sturdy enough not to crumple when placed inside the fridge. Some high-end macarons shops package their macarons inside hard gift boxes which are ideal for storing.
  • Ziplock—This is only good if you want to consume the macarons within the day. If you want to use the ziplock bag as container inside the fridge, make sure to place it in the safe place where the shells won't break.

Pro Tips

Storing macarons is just one of the many things that you need to know. There are other important things as well like:​

  • Learn the shelf life of macarons
  • Use only clean and dry containers
  • Follow the manufacturer’s instructions
  • Let the macarons cool before eating

If you have stored the macarons inside the freezer, its not a good idea to eat it immediately. You have to hold your horses and wait for 30 minutes to an hour before eating it. If the macarons are too cold, it won't taste as delicious.
